And what about yoghurts?

Here you need to be careful with lactose intolerance. Of course, this is an individual question, and everyone has their own personal intolerance to specific products, but in the modern world, most people find it is lactose intolerance.

But why? After all, milk is the most natural of all foods.

First, this is not entirely true. Now many women, at least in Europe, do not breastfeed due to the fact that they work. And in general, there is no tragedy in this - the child needs exactly three months to develop his own immunity. And only at this moment of life milk is a necessary element. It's useless for an adult. On the contrary, it is absolutely useless. Especially for teeth.

That is, it also makes sense to refuse yoghurts?

You can choose lactose-free yoghurts.

What about baking?

Within a month of such a life, deviations will begin in me, and it is a matter of time when they become irreversible. The most important thing here is to understand that the request for a cake, Coca-Cola and other fast carbohydrates is sent by the brain. And yes, the body needs sweets, but this does not mean at all that we are talking about Coca-Cola and croissants. You just need to teach your brain to send the right commands and respond to them correctly.

And how to achieve this? The power of thought and auto-training?

Awareness is necessary, of course, but the most important thing is to chew thoroughly. If you don't chew, your brain doesn't have the time or ability to identify what you're eating.

Technically, everything is clear. But how do you force yourself to change your habits? You know that changing them is extremely difficult.

Why did you even start dieting? This is perhaps not the most masculine profession.

I grew up in a peasant family. During the war, the Francoists killed 80% of my family just because they were Catalans and I was raised by my grandfather. Since I was the eldest of the grandchildren, I had to inherit the household. Therefore, when I graduated from elementary school, my grandfather thought that education was enough for me - it was time to go to the field. But I continued to study. I refused and said that I did not give any lectures, and then agreed - after all, I needed a job, and he was ready to pay me. And I started lecturing. Then he began to produce phytocosmetics and opened a clinic in Cannes that specialized in preventive medicine. And one morning I woke up and fainted. I woke up in a hospital in Paris. “You are exhausted. You need to rest,” the doctor told me. And when I realized that I would not agree of my own free will, I just put it on the plane and sent it to Sardinia. I spent two weeks there, thought hard and realized that it was time to give it all up.

Why?

Because mixing wine and food is wrong. You stop chewing and start swallowing food. Therefore, when people drink at dinner, eating becomes an attempt to swallow more.

Maybe they drink just for fun?

Pleasure is a delicacy. It can be felt only by savoring wine. Then the drinking starts.

Your diet consists of continuous restrictions.

No, I just know exactly what I want. And I don’t drown out emotions and other non-nutritional needs with food.

It turns out that your method is something like psychotherapy, except that it is centered around nutrition.

I wouldn't say so. I studied psychotherapy, but I don't really trust it. In addition to the fact that people need to be listened to, they also need to be helped. I have a theory that basically we are all perfect. And in order not to forget about it, every morning I get up, go to the mirror and give myself 10 out of 10. And in the evening I sum up the day, remembering what I did during the day, and deduct points for mistakes.

And what are you filming for?

For selfishness, for lack of patience. Yes, you never know what else. You know, - Dr. Chenot philosophically remarks, - there is one rule. Not a thousand, but just one. We all live on Earth, which means that we all inevitably obey its laws - in particular, the rhythm of the day. And the aging process - over the years, all body functions slow down. At 35, a decrease in active vital functions begins, and primarily digestive. If I ate the same food at 71 as I did at 20, I wouldn't stand a chance.

What did you eat at 20?

After the lyceum, I moved from Toulouse to Paris. It was there that I spent my wildest years. Johnny Hallyday and I are the same age, and we had one youth for two. Since the French are real racists, we never liked French food and went mostly to Catalan or Toulouse restaurants. And these are basically all sorts of cassoulet dishes (meat stew with beans) and a lot of wine.

And when did the years of happy madness end?

I was giving a course of lectures in Italy, and on one of them a girl sat down opposite me. Said my friend asked me to say hi. I invited her to dinner, and after three hours I realized that I was not at all ready to part with her. That's how it all ended. And another life began, which has been going on for 35 years.

They bring food.

Problems with the gallbladder, - throwing an absent-minded glance after the departing waiter, Dr. Chenot notices and enthusiastically tries the pancakes. - Oversalted. And strongly.

Maybe the salmon is too salty?

No, there is practically no salmon here at all, - he shrugs his shoulders imperturbably. - The pancakes are not baked inside, but the edges are dry, like cardboard. Of course, this is not to say that it is disgusting, but it could be much better.

Do you like to cook yourself?

No, the kitchen is my wife's diocese (Dominic is in charge of the menu at Palace Merano). I can cook spaghetti or risotto, but in general I am not drawn to the development of this territory. But I really like to go to the market. I like the delicacy of the process - the choice of fish, vegetables, fruits.

What else do you enjoy in life?

Perhaps the greatest pleasure I get from work. And not only in the clinic. I write a lot - articles, books. And from my family. Dominique and I have two children. My son lives in San Francisco. Nicolas is very rational and to some extent followed in my footsteps - he is engaged in cosmetics, bioadditives and opened his spa chain. True, without treatment centers. And Caroline is an artist, she lives in Lugano. And by the way, raving about Moscow. Four years ago, she even came here for a year to learn Russian.

Yes, it has always interested me from a cultural point of view. And now 30% of my clients are Russians. He advises eating foods rich in carbohydrates no earlier than noon, when, for example, you can eat boiled brown rice with raw vegetables. Dinner is better not very late and not very crowded. For example, boiled fish fillets combined with boiled vegetables. Also, the diet should be supplemented with omega-3 from fish oil, magnesium, calcium and prebiotics to improve digestion.

Chenot pays great attention to the compatibility of products. He does not recommend mixing certain products. For example, berries and fruits should be consumed separately from everything and preferably in the morning, the doctor says, and animal protein (meat, fish, eggs, dairy products) cannot be combined with cereals, it is better to use them with vegetables and herbs.

Chenault also believes that the combination of coffee with milk is very harmful to the body. He recommends giving up coffee altogether, and if that doesn't work, drinking it separately from everything, but no more than one cup a day.

In his nutrition system, Chenot divides foods into "acidifying" and "alkalinizing." He believes that an excess of so-called "acidifying" foods leads to inflammation and disease. For example, excess red meat, alcohol, refined carbohydrates. "Alkaline" products, on the contrary, neutralize the action of acids and prolong life. Chenot includes vegetables (except potatoes), greens, most fruits and berries, as well as some cereals as "alkaline" products. In human nutrition, Chenot writes, it is important to adhere to the acid-base balance, all products must be present, but in the correct ratio and combination.

NO enemas or laxatives!

Using laxatives to cleanse the body is undesirable, Chenot says, it is better to drink a glass of warm water. He also did not use traditional cleansing enemas and hydrocolonotherapy to cleanse the body.
